An understanding of the use of traditional preparation on contemporary Mexican food. Preparation of basic Mexican ceviches and marinades for seafood. An introduction to varieties chillies and the importance and preparation of moles as the most recognised sauce from Mexico.
The course will include a small recipe booklet and tasting of all the preparations
